Here is that stew recipe that Christina asked for. Very yummy, and very easy.
Mediterranean Chicken Stew
2 tbsp olive oil
1 onion chopped
1 green pepper chopped
2 cloves garlic, minced (I use garlic powder)
1 tsp dried oregano, crumbled
28 oz. can diced tomatoes
19 oz. can chickpeas, rinsed and drained
1 cup chicken broth
1/4 cup fresh parsley, chopped
1/2 tsp salt
1/4 tsp pepper
1 deli rotisserie chicken, cut into 8-10 pieces
1/2 cup kalamata olives
In large skillet, cook onion and green pepper until soft, 5 min.
Add garlic and oregano and cook, stirring, 1 min.
Add tomatoes, chickpeas, broth, parsley, s&p.
Cook, stirring a few times, for 5 min.
Add chicken and olives, cook for 15 min, stirring frequently.
Serve over rice.
